Allergen Changeover Maintenance: How Food & Beverage Teams Can Prevent Cross-Contact with Better Work Orders

Food allergen management, referred to in industry as food safety, is often discussed as a sanitation or quality issue. Most guidance focuses on cleaning validation, labeling controls, and regulatory compliance. But when a food manufacturer switches from one product to another, especially from an allergen-containing product to a non-allergen product. This process also aligns to some religious aspects of Kosher or Halal food and beverage. There’s another critical function involved: maintenance.

In reality, allergen changeovers succeed or fail based on the condition of equipment, the integrity of components, and the quality of the maintenance process supporting sanitation activities. A worn gasket can trap allergen residue. A damaged conveyor can create hard-to-clean harborage points. Poorly documented maintenance work can leave manufacturers unable to prove control during an audit.

As regulatory expectations evolve and digital traceability becomes the norm, food and beverage manufacturers need a more structured way to manage allergen changeovers. The hidden risks during product changeovers

Every changeover introduces risk. When a production line transitions from a product containing milk, peanuts, soy, tree nuts, wheat, or other allergens to a non-allergen product, manufacturers must demonstrate that allergen residues have been effectively removed and that equipment is suitable for production.

Cracked or degraded gaskets can harbor allergen residues that survive routine cleaning procedures.

Conveyor and transfer point accumulation

Conveyor crossover points are recognized as locations where allergen-containing materials can migrate to non-allergen production lines if not properly controlled. FARRP specifically recommends evaluating crossover points and preventing allergenic materials from falling onto adjacent lines.

Inaccessible equipment surfaces

Poor equipment design or modifications may create areas that cannot be adequately inspected or cleaned.

Using non-food-grade replacement parts or incorrect gasket materials can create both compliance and contamination risks.

Lubrication errors

Food-grade lubricants must be verified and documented. Auditors increasingly expect facilities to demonstrate that only approved lubricants are used on food-contact or food-adjacent equipment.
